Black Bean Cakes



Black Bean Cakes

2 Cups black beans, drained
1 Tablespoon cilantro, chopped
1 Tablespoon chili powder
1 Teaspoon ground cumin
½ Teaspoon ground coriander
2-3 cloves garlic, minced
1 small onion, finely chopped
2 large eggs, beaten
½ Cup gf flour (plus more if needed)
Vegetable oil

Blend beans with spices in blender. Pour into bowl and add garlic, onion and eggs with enough flour to make a thick batter. Heat a little oil in a non-stick pan. Spoon about a Tablespoon (or more) batter and fry for 2 minutes on each side or until crispy. Serve with guacamole!
