Making Yogurt with Almond Milk


I am experimenting with making yogurt from almond milk. I just don't like the taste (or price) of the coconut milk yogurt and I am trying to eliminate soy from our diet.
This was my first attempt at making it yesterday. It didn't turn out too bad. It was definitely edible.
The consistency was a little more runny than I wanted. I knew it wouldn't be as firm as a dairy yogurt but I want it a little more firm.
I am going to play with it more before I post a recipe, but I really think this is going to be doable - so for those of you out there who don't do soy either, stay tuned - there will be a recipe soon.

I'm also anxious to hear how things go. We don't eat soy so it is pretty impossible to find a yogurt substitute.

My youngest, Charlie, has asperger's and we're two weeks into the diet. cant wait to find out how you make this, because the boy loves his yogurt

Oh, this is great. Now I have more incentive to make raw almond milk -- so I can make yogurt! I do like coconut-based yogurt but options are good. If you strain it, it would thicken (look for instructions on making Greek yogurt and that would probably work). The liquid could be used as more of a keifer.

I'm looking forward to a recipe on this! My son is yogurt lover and we haven't been able to find a replacement since going GFCF since he's allergic to coconut.

I cannot wait to hear how this continues to go for you!! And looking forward to your recipe. My son is gf/cf, almost sf (soy lecithin is in EVERYTHING!...so frustrating!), almost no refined sugar (every once in a while...great while, he has a little organic sugar in something baked, but almost everything that's sweet that he eats is sweetened with agave syrup and/or fruit/fruit juices), low sugar, nitrate/nitrite free, msg free, and as preservative & chemical free and organic as possible. We've seen a tremendous difference in him as a result! :>
