Awful peanut butter cookies


I have seen this recipe floating around in many places and people talking about how it's a great and easy recipe so I decided to try it instead of my usual one. It is awful. It made very hard jaw breaker cookies.
The recipe uses no flour. It is 1 cup peanut butter, 1 cup sugar and 1 egg. I do not recommend this recipe at all!

Hmm, I haven't made them myself, but my niece made them and they were very soft and chewy. However, on the second day, no good. They had to be eaten in one day, or they hardened up. I suppose they could be nuke-able then. Anywho, maybe adjust the cooking temp and time to keep them soft?

I wouldn't nuke them - I'm trying to avoid using the microwave any more than usual. I'm just going back to my old recipe which has never let me down.

Oh, I am so disappointed! I had been contemplating making these too. They look pretty, I am sorry they do not taste so yummy. Thanks for being the test kitchen though!

I make these all the time and they are soft. They get a little harder on day two, but definitely still edible. I'm not sure why they turned out so poorly for you.

We use this recipe all the time and love it. We've never had a problem. We do add 1 tsp of vanilla to it. You have to make sure that you flatten them with a fork like traditional peanut butter cookies. Then store them in an airtight container. They will start to get crumbly in a couple of days, but it makes such a small batch, they don't last long. We have also used homemade cashew butter and my kids and hubby love them.
