I couldn't find the Tofutti brand that we usually buy, so I bought these. No one would eat them - so the dog gets them. What a waste. They totally do not taste like cheese!

I am a mom of a child with both autism and celiac disease. This blog will hopefully help guide others who are new to the GFCF diet. This blog is not meant as the "end all know all" - I am not a doctor or a scientist, I am simply a mom feeding my family. We do use oats which many celiacs avoid. In addition to gluten and casein, we avoid nitrates and artificial colors and flavors. I also try and limit High Fructose Corn Syrup. We follow the diet as a family - everything in our house is GFCF.

I have a GFCF question... I am doing this diet with my son and did it WRONG! I didn't wean slow enough. I don't know what I was thinking!!!! His behavior is not good. Opp. defiant and screaming when upset big time. What do I do????

Sounds like withdrawal to me - would have happened regardless of how fast you went. You just need to bite the bullet and you will get through this. To me this is definitely a sign that the diet is working!
Hi it's me again! How long should his crazy behavior last? We're at 3 1/2 weeks already. He's telling teachers and us to shut up and yelling no at us all of the time. Could it be something else, like yeast?? I am so frustrated.
It could be yeast. It could be phenols - are you keeping a diary of what he is eating? Are they high sugar foods that could be causing yeast? Are they foods that are high in phenol? If it is yeast - treat for yeast. If it is phenols - remove the high phenol foods. For Andy that was bananas - funny how the other things don't always turn up until other offenders have been removed from the diet. It could also just be that he is now able to express himself and doing so. Why does this have to be so difficult. I question every change in Andy's mood and wonder if it is something he ate. It's not fair that our kids can't just eat and be normal.
